Community boxes are such a blessing! Sometimes the items inside can feel a little random or challenging to build a meal from, but this week I’m sharing some fun, easy, and budget‑friendly ideas to fill your stomach and stretch every ingredient

This week’s community pantry box came with:
  • 🫘 Dry beans
  • 🍚 Brown rice
  • 🥔 Potatoes
  • 🥫 Canned mixed vegetables
  • 🍝 Elbow macaroni
  • 🥜 Jars of peanut butter
Hearty Bean, Potato & Veggie Soup

A warm, comforting one‑pot meal.


Ingredients:
Beans, potatoes, canned mixed vegetables, elbow macaroni, salt/pepper, any seasoning you have (garlic powder, onion powder, bouillon, etc.)


Instructions:

  1. Cook beans until tender (or use canned if you have them).
  2. Dice 2–3 potatoes and add them to a pot with the beans.
  3. Pour in enough water or broth to cover.
  4. Add the can of mixed vegetables (liquid included for flavor).
  5. Season generously.
  6. Simmer 20–25 minutes until potatoes soften.
  7. Add ½ cup elbow macaroni and cook 8–10 minutes more.
  8. Taste and adjust seasoning.
    A full, hearty soup from simple ingredients.

Peanut Butter Stir‑Fry Rice Bowl

A surprisingly delicious sweet‑savory dish.


Ingredients:
Brown rice, canned mixed vegetables, peanut butter, soy sauce (optional), salt.


Instructions:

  1. Cook brown rice according to package directions.
  2. Drain the mixed vegetables.
  3. In a small bowl, whisk 2 tbsp peanut butter with a splash of warm water to thin it.
  4. Add soy sauce or salt to taste.
  5. Heat a pan, add the vegetables, and toss with the peanut sauce.
  6. Spoon over the rice.
    Creamy, filling, and super budget‑friendly

Potato & Macaroni Bake

Ingredients:
Potatoes, elbow macaroni, mixed vegetables, any seasoning.
Instructions:

  1. Boil diced potatoes until just tender.
  2. In a separate pot, boil elbow macaroni.
  3. Combine potatoes, macaroni, and drained mixed vegetables in a baking dish.
  4. Add a splash of broth, milk, or even water to keep it moist.
  5. Season well (salt, pepper, paprika, garlic powder).
  6. Bake at 375°F for 20–25 minutes until lightly browned on top.
    Simple, cozy, and kid‑friendly.

Bean & Rice Patties

Great for sandwiches or dipping.
Ingredients:
Cooked beans, cooked brown rice, seasonings, oil for frying.
Instructions:

  1. Mash 1 cup cooked beans in a bowl.
  2. Add 1 cup cooked rice.
  3. Season with salt, pepper, garlic powder, or anything you have.
  4. Form into patties.
  5. Pan‑fry in a little oil until golden on both sides.
    Serve with potatoes or veggies.
One‑Pot Beans, Rice & Veggie Skillet

A hearty, stick‑to‑your‑ribs meal.
Ingredients:
Cooked beans, cooked brown rice, canned mixed vegetables, seasonings.
Instructions:

  1. Heat a pan and add cooked beans and rice.
  2. Drain the mixed vegetables and stir them in.
  3. Add a splash of water or broth to keep it from sticking.
  4. Season with salt, pepper, garlic powder, or chili powder if you have it.
  5. Cook 5–7 minutes until everything is hot and combined.
    A simple, filling “everything in one pan” dinner
